French Toast: The Simplest Way to Rescue Yesterday's Bread
There's a reason the French call this pain perdu — "lost bread." It was never a dessert. It was how you saved a loaf gone too hard to slice. Eggs, milk, sugar, a hot pan, and the bread you were about to throw out becomes the best thing on the table.
Why stale bread matters: fresh bread soaks up the custard instantly and turns to mush. Day-old bread has dried slightly, so it drinks slowly and holds its shape in the pan — crisp outside, soft inside. Thick country bread or brioche is ideal.

Ingredients
6 thick slices of country bread, slightly stale
3 eggs
250 ml / 1 cup milk
75 g / 1/3 cup cane sugar
A knob of butter
Sugar measured by volume varies with packing — use the grams if you have a scale.
1. Make the custard
Whisk the eggs with the sugar until slightly lightened, just enough to dissolve it. Pour in the milk and whisk again until smooth.
2. Soak the bread
Dip each slice on both sides, a few seconds per side. It should be saturated but still liftable in one piece — if it sags, you've gone too far. Over-soaking is the single most common mistake.
3. Cook it
Pan-fried — crisp, caramelised edges. Melt butter over medium heat and cook about 3 minutes per side until golden, adding fresh butter between batches. Keep the heat moderate: too hot and the outside burns before the inside sets.
Oven-baked — hands free, all at once. Preheat to 180 °C / 350 °F (gas mark 4). Butter a dish, lay the slices out, pour the leftover custard over, and sprinkle with sugar for a caramelised crust. Bake until golden. Softer, closer to a bread and butter pudding.
Pan for texture, oven for convenience.
4. Serve warm
Within minutes of leaving the heat — it loses its edge as it cools. Icing sugar, honey, maple syrup, jam, or a handful of berries.
Leftovers reheat well in a dry pan, a minute per side. Skip the microwave — it softens the crust.
